Light and airy and simple to make, this banana pancake is one to add to your repertoire.
- 1 egg
- 28g self-raising flour
- 1½ tbs natural sweetener
- 1½ tbs unsweetened almond milk
- ¼ tsp ground cinnamon, plus extra for dusting
- ½ tsp baking powder
- 1 banana, mashed, plus extra slices to serve
- 1½ tbs sugar-free maple syrup
Whisk egg, flour, sweetener, almond milk, cinnamon and baking powder in a medium bowl until smooth and combined. Add mashed banana and whisk until combined. Pour mixture in the WW omelette maker.
Microwave on High (100%) in 30 second bursts, for a total of 2 minutes, or until just cooked through.
Place extra banana slices over one half of pancake. Carefully enclose the omelette maker from the opposite half to fold pancake over. Open omelette maker and gently slide banana bread onto a serving plate using a rubber spatula. Dust with extra cinnamon and drizzle with maple syrup to serve.
